Chef Karen is a fan of Middle Eastern and North African cuisine since high school when her French class took a field trip to a restaurant where she had couscous for the first time. She had the good fortune to work for Matt Dillon here in Seattle where many of the menus take our local bounty and add the flavors that make up the cuisine of the region. The citrusy flavors of sumac and preserved lemons, alongside the creaminess of hummus and yogurt round out chicken and lamb, not to mention elevating vegetables to divine heights.
