Our most requested class: Tamales! In our family, we grew up having huge tamale-making parties at my parents' home. A tamale is three parts: the masa, the filling and the sauce to serve with. And each part has its own unique characteristics, depending on the region the recipe originated. We will make a traditional masa, as well as a fire-roasted corn masa, and for our fillings we will have the red chili shredded pork, rajas (cheese and anaheim chilies), and simmered beef and potato. For our sauces: we will make a salsa and a chile sauce.
This class is hands-on. And yes, we will have tamales at the end of the night!
