Mexico: Vibrant Sauces

Authentic Mexican cooking begins with a few key ingredients that are slowly turned into savory, flavor-filled sauces, used for simmering meats, ladling over earthy corn tortillas, drizzled over tamales. In the Vibrant Sauces class, we will use our techniques learned in the Dried Chile class and will make three sauces and two salsas: Northern Mexican Enchilada Sauce, Dark Mole Sauce, Tomatillo-Verde Sauce. We will make an easy to do at home salsa as well as an avocado-tomatillo salsa.

Class includes dinner and beverages.
