Enchiladas are comfort food.With their rich sauces, savory fillings - they are a crowd pleaser. We explore a variety of fillings: from Cotija Cheese and white onion, to spiced ground beef, shredded beef and roasted chicken. We experiment with several regional sauces including the traditional red chile sauce to lighter sauces which are perfect for summer evenings.
